La flash pasteurisation est un procédé de conservation des aliments qui dérive de la pasteurisation inventée par Louis Pasteur en 1856 largement mis en pratique dans l’industrie agro-alimentaire, pour des produits divers tels que le lait, la bière, les jus de fruits ou le vin.
Le jus subit un traitement thermique pendant quelques secondes, qui permet d’étendre sa durée de conservation tout en réduisant la modification de leur composition par rapport à un jus de fruits frais pressé et l’altération de caractéristiques principales.
